Fenugreek Microgreen Thepla

A Gujarati staple made even more authentic and flavorful with fresh fenugreek microgreens.

Ingredients

  • 2 cups whole wheat flour

  • 1 cup fenugreek microgreens, chopped

  • 1/2 cup yogurt

  • Spices: turmeric, chili powder, coriander powder

  • Salt

  • Oil

Instructions

  1. Knead a soft dough using all ingredients.

  2. Roll out thin theplas.

  3. Cook on a hot tawa with oil until both sides have golden brown spots.

  4. The microgreens provide a more intense flavor than dried kasuri methi.
