Microgreen Pakoras

Crispy, fried fritters with a hidden treasure of nutritious microgreens.

Ingredients

  • 1 cup gram flour (besan)

  • 1/2 cup mixed microgreens (radish, fenugreek)

  • 1 small onion, sliced

  • Spices: turmeric, red chili powder, ajwain

  • Salt

  • Water to make batter

  • Oil for deep frying

Instructions

  1. Make a thick batter with besan, water, spices, and salt.

  2. Fold in the onions and microgreens.

  3. Heat oil in a kadai. Drop spoonfuls of the batter and fry until golden and crisp.

  4. Serve hot with tea and chutney.
