Microgreen Pakoras
Crispy, fried fritters with a hidden treasure of nutritious microgreens.
Ingredients
1 cup gram flour (besan)
1/2 cup mixed microgreens (radish, fenugreek)
1 small onion, sliced
Spices: turmeric, red chili powder, ajwain
Salt
Water to make batter
Oil for deep frying
Instructions
Make a thick batter with besan, water, spices, and salt.
Fold in the onions and microgreens.
Heat oil in a kadai. Drop spoonfuls of the batter and fry until golden and crisp.
Serve hot with tea and chutney.
