Microgreen Uttapam
A South Indian classic gets a nutritious makeover with a colorful microgreen topping.
Ingredients
2 cups idli/dosa batter
1 onion, finely chopped
1 tomato, finely chopped
1 cup mixed microgreens
Oil for cooking
Instructions
Heat a tawa and pour a ladle of batter. Don't spread too thin.
Top with onions, tomatoes, and a generous amount of microgreens.
Drizzle oil around the edges and cook until the base is golden.
Flip and cook for another minute. Serve hot.
