Microgreen Uttapam

A South Indian classic gets a nutritious makeover with a colorful microgreen topping.

Ingredients

  • 2 cups idli/dosa batter

  • 1 onion, finely chopped

  • 1 tomato, finely chopped

  • 1 cup mixed microgreens

  • Oil for cooking

Instructions

  1. Heat a tawa and pour a ladle of batter. Don't spread too thin.

  2. Top with onions, tomatoes, and a generous amount of microgreens.

  3. Drizzle oil around the edges and cook until the base is golden.

  4. Flip and cook for another minute. Serve hot.
